Why hello Pumpkin. Hows your Thursday panning out?
Mine is much better now that I have a coffee in my hand and a delicious Salted Caramel Eclair. Oh how I love french pastry, Thank you Le Peche Gourmand! Did I also mention the open fire??
I’ve got a treat for you today.
This will make the weekend a much happier place. A warm ‘just out of the oven’ Pumpkin Chocolate Chunk Muffins. Yes chunks not tiny little chips I’m talking about chocolate you can taste and see, chunks baby!
I figure because this has got pumpkin in this will (in my eyes) count as 1 of your 5 a day.
2 Cups Plain Flour
1/2 Cup Panella Sugar or Brown Sugar
1/2 teaspoon Salt
1 teaspoon Cinnamon
1/4 teaspoon All Spice
1/8 teaspoon Ground Ginger
1/8 teaspoon Ground Nutmeg
1/8 teaspoon Ground Cloves
2 teaspoons Baking Powder
100gm-150gm Good quality Milk or Dark Chocolate, chopped into rough chunks
1/3 cup Pecans roughly chopped
1 Egg, room temp
1 teaspoon Vanilla Extract
1/4 cup flavorless Oil
1 Cup Pumpkin, cooked and pureed
1 Cup Whole Milk, room temp
Pop your oven on to 180*c Fanbake and decide if you want 24 mini muffins, 12 normal size muffins or 6-8 Texas size muffins.
I was Greedy so you can guess what size I went for.
In a bowl mix the flour, baking powder, sugar, spices and salt in a bowl. I use a mixer with a paddle attachment.
In a jug mix the egg, oil, milk, vanilla and pumpkin together and with your mixer on or your spatula pour the wet ingredients into the dry.
Finally fold the chocolate chunks into the mix.
Spoon the mix into chosen size muffin tins and sprinkle over the chopped pecans.
Mini muffins for 7-10 minutes
Standard Muffins 15-18 minutes
Texas Muffins 20-25 minutes
Check with a toothpick inserted into the centre of the muffin. If it comes clear pull these babies out and let cool for 5 mins before placing on a cool rack.
It is completely acceptable to sneak one of these warm darlings off the rack as this is when they are at their best.
The melty chocolate, the crunchy pecans oh don’t get me started.
Just go and cook now! Your weekend depends on it.
